Chocolate Maca Muffins

I love the holiday season. I love the smell of a fresh-cut Christmas tree, the inviting warm aroma of spices that never seems to want to leave our home, holiday movies and music, spending time with loved ones and celebrating life. During this time of the year, I spend it away from the the busy routine and retreat into a cocoon that consists of baking, reading and sleeping. No work, social media, answering emails, nada for one full week. Then, after Christmas I slowly begin to get back into a routine and start getting excited for the new year ahead. This holiday season, we’ve added an old tradition – playing dominos. Although, the North American domino-game does not look the same as the European one. I am on a quest to find the one I used to play when I was a child, the old school kind with the wooden boards. Anyone know what I’m talking about?

On Christmas day, I made Chocolate Maca muffins. Moist, delicious, chocolate muffins that are wonderful in the morning or to enjoy in the afternoon with tea. My favourite way is served warm with a touch of ghee and some herbal tea. In this recipe, I used Maca and Cacao, two superfoods that compliment each other really nicely.

Maca is a medicinal superfood, used for balancing hormones, supporting normal hormone production, increasing fertility, improving libido, memory and boosting immunity. It is a nutrient-dense superfood rich in enzymes, B vitamins and minerals including magnesium, iron and calcium. This superfood is also a popular ingredient in natural skincare products as it’s high in antioxidants which helps prevent skin damage resulting in a radiant healthy complexion.

Raw Cacao is potent with antioxidants that helps decrease inflammation, improves digestion and since it’s nutrient-dense, cacao is incredibly rich in good fats, fiber, and essential vitamins. Let’s not forget the minerals: magnesium (highest source), iron, chromium, vanadium, copper, phosphorus and zinc. This is also one of the most powerful superfoods used in skincare products because it promotes cellular healing, increases hydration, stimulates circulation and brightens complexion.

Chocolate Maca Muffins

Ingredients
  • 1 cup almond flour
  • ¼ cup raw cacao powder
  • 1 tsp. Organic Burst Maca powder
  • ¼ tsp. baking soda
  • ¼ tsp. baking powder (aluminum-free)
  • 2 eggs (organic, free-range, pastured)
  • ¼ cup organic virgin coconut oil (melted)
  • ¼ cup apple butter (you can use mulberries or dates instead of apple butter)
  • 3 tbsp. coconut sugar
  • pinch of pink salt (or sea salt)
Instructions
  1. Preheat oven to 190C / 375F.
  2. In a bowl, add the almond flour, raw cacao, maca, baking soda, baking powder, pink salt and coconut sugar. Mix the ingredients together with a spatula and set aside.
  3. In a separate bowl, add the eggs and the melted coconut oil. Whisk these ingredients together. Pour the mixture over the dry ingredients and add the apple butter to the mix. Mix everything well together.
  4. With a brush or paper towel, dip it into coconut oil and wipe the muffin tin with it. It will help the mixture not stick to the muffin tin cups. You can also use muffin cups (unbleached chlorine-free TCF).
  5. Fill each muffin cup half way to the top with the mixture and bake for 20 minutes.
  6. Remove and set it aside to cool for 5-10 minutes before serving.
